  • ½ cup unsalted butter, softened
  • 1.5 cups sharp cheddar cheese, shredded
  • ¼ cup sesame seeds
  • 1 large egg yolk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

    Preheat oven to 350°F. Line a baking sheet with parchment paper. Toast 2 tbsp sesame seeds in a dry skillet over medium heat until golden and fragrant, about 3 minutes; set aside.

    In a large bowl, beat 1/2 cup softened butter and 1/2 tsp salt until creamy. Add 1 egg yolk and 1/4 tsp black pepper, beat until combined.

    Mix in 1.5 cups shredded cheddar cheese until evenly distributed. Add 1.5 cups flour and the toasted sesame seeds; stir until a soft dough forms.

    Turn dough onto a lightly floured surface. Shape into a log about 2 inches in diameter, wrap in plastic, and chill for 30 minutes until firm.

    Slice the log into 1/4-inch thick rounds. Place on prepared baking sheet, spacing 1 inch apart. Sprinkle remaining 2 tbsp sesame seeds over tops, pressing lightly.

    Bake until edges are golden brown, 12-15 minutes. Cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
