Ingredients

  • 1 cup semolina
  • ½ cup plain yogurt
  • 1.5 cups water
  • 1 medium, finely chopped onion
  • 1 medium, grated carrot
  • 2 finely chopped green chilies
  • ¼ cup, chopped coriander leaves
  • ½ teaspoon salt

    In a large bowl, whisk together 1 cup semolina, 1/2 cup yogurt, 1.5 cups water, and 1/2 tsp salt until smooth. Let rest for 15 minutes.

    Stir in 1 finely chopped onion, 1 grated carrot, 2 chopped green chilies, and 1/4 cup coriander leaves. The batter should be thin and pourable; add a splash of water if needed.

    Heat a non-stick skillet over medium-high heat. Pour a ladleful of batter from the edge inward, filling gaps to create a lacy pattern.

    Drizzle 1 tsp oil around the edges and cook until the bottom is golden and crisp, about 2-3 minutes. No need to flip.

    Fold the dosa in half and serve hot with chutney or yogurt.

    Repeat with remaining batter, stirring occasionally. Adjust heat if browning too fast.
