Ingredients
- 1.5 lb steak (such as sirloin or ribeye)
- 1 bunch asparagus
- 6 cloves garlic
- 3 tbsp olive oil
- 2 tbsp butter
- 1 tsp salt
- ½ tsp black pepper
Instructions
- 1
Pat the 1.5 lb steak dry and season both sides with the 1 tsp salt and 0.5 tsp black pepper. Let sit at room temperature for 15 minutes.
- 2
Heat 2 tbsp olive oil in a large skillet over high heat. Add the steak and sear until a deep brown crust forms, about 4-5 minutes per side for medium-rare. Transfer to a plate and let rest.
- 3
While the steak rests, trim the woody ends from the 1 bunch asparagus. Slice the 6 garlic cloves thinly.
- 4
Reduce heat to medium and add the remaining 1 tbsp olive oil and 2 tbsp butter to the skillet. Add the asparagus and garlic, cooking until the asparagus is bright green and tender-crisp, about 5-7 minutes, stirring occasionally.
- 5
Slice the rested steak against the grain and serve with the asparagus and garlic. Spoon any pan juices over the top.
