Ingredients
- 12 large scallops
- 4 slices prosciutto
- 4 whole scallions
- 2 tablespoons olive oil
- 1 tablespoon butter
- ½ teaspoon salt
- ¼ teaspoon black pepper

Pat the 12 scallops dry with paper towels and season both sides with the 0.5 tsp salt and 0.25 tsp black pepper.

Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes. Add the 4 prosciutto slices and cook until crisp, about 2 minutes per side. Transfer to a plate.

Add the remaining 1 tbsp olive oil and 1 tbsp butter to the same skillet. Place the scallops in a single layer, not touching, and sear until golden brown, about 2 minutes per side. They should feel firm but springy.

Thinly slice the 4 scallions, keeping white and green parts separate. Add the white parts to the skillet and toss with the scallops for 30 seconds until fragrant.

Arrange the scallops on a platter, crumble the crispy prosciutto over the top, and sprinkle with the green scallion parts. Serve immediately.
