Ingredients
- 8 count large sea scallops, patted dry
- 4 slices thick-cut bacon
- 6 oz black pudding
- 3 tbsp butter
- ½ count lemon
- 2 cups mixed greens or arugula
- 1 pinch fleur de sel and cracked black pepper

Cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Transfer to a paper towel and chop into bite-sized pieces.

Slice black pudding into 1/4-inch rounds. Add to the bacon fat and sear until golden on both sides, about 4 minutes total. Remove and set aside.

Pat scallops very dry. Season generously with fleur de sel and cracked pepper on both sides.

Increase heat to medium-high. Add 1.5 tbsp butter to the skillet and let it foam until it turns light brown, about 60 seconds.

Sear scallops 90 seconds per side without moving. They should be opaque outside with a barely translucent center.

Toss greens with remaining 1.5 tbsp butter, lemon juice, and a pinch of salt. Plate greens, scallops, bacon, and black pudding together. Serve immediately.
