Ingredients
- 8 oz scallops (dry sea scallops, side muscle removed)
- 4 oz bacon, chopped
- 1 medium green apple (Granny Smith), sliced thin
- ⅓ cup dry white wine
- 3 tbsp butter
- ½ whole lemon (juiced)

Cook bacon in a large skillet over medium-high heat, stirring occasionally, until crispy, about 5 minutes. Transfer to a paper towel; set aside.

Pat scallops completely dry with a paper towel. Season with salt and black pepper on both sides.

Increase skillet heat to high. Add 1 tbsp butter; when it foams, lay scallops flat without moving them. Sear 90 seconds until golden on bottom.

Flip scallops and sear the other side 60–90 seconds until edges look opaque. Transfer to a plate.

Pour white wine into the skillet, scraping up any browned bits. Simmer 1 minute until reduced by half. Whisk in remaining 2 tbsp butter off heat.
