Ingredients

  • 8 oz scallops (dry sea scallops, side muscle removed)
  • 4 oz bacon, chopped
  • 1 medium green apple (Granny Smith), sliced thin
  • ⅓ cup dry white wine
  • 3 tbsp butter
  • ½ whole lemon (juiced)

Instructions

  1. 1

Cook bacon in a large skillet over medium-high heat, stirring occasionally, until crispy, about 5 minutes. Transfer to a paper towel; set aside.

  2. 2

Pat scallops completely dry with a paper towel. Season with salt and black pepper on both sides.

  3. 3

Increase skillet heat to high. Add 1 tbsp butter; when it foams, lay scallops flat without moving them. Sear 90 seconds until golden on bottom.

  4. 4

Flip scallops and sear the other side 60–90 seconds until edges look opaque. Transfer to a plate.

  5. 5

Pour white wine into the skillet, scraping up any browned bits. Simmer 1 minute until reduced by half. Whisk in remaining 2 tbsp butter off heat.

  6. 6

Arrange scallops and apple slices on plates. Top with bacon, drizzle with butter sauce, squeeze lemon juice, and serve hot.
