Ingredients

  • ½ lb shrimp, peeled and deveined
  • ½ lb scallops
  • 1 medium red bell pepper
  • 4 stalks green onions
  • 3 cloves garlic
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil

Instructions

    Pat the 0.5 lb shrimp and 0.5 lb scallops dry with paper towels. Season lightly with salt and pepper.

    Heat 2 tbsp vegetable oil in a large skillet or wok over high heat until shimmering, about 1 minute.

    Add the seafood in a single layer and sear without stirring for 2 minutes, until golden on the bottom.

    Flip the seafood and add the 1 diced red bell pepper and 3 minced garlic cloves. Stir-fry for 2 minutes, until the peppers are crisp-tender and the seafood is opaque.

    Pour in 3 tbsp soy sauce and toss everything to coat. Cook for 1 minute, until the sauce is bubbling and slightly reduced.

    Stir in the 4 sliced green onions and cook for 30 seconds, until fragrant. Serve hot over steamed rice.
