Ingredients

  • ½ lb fresh white fish or shrimp
  • ¼ cup lime juice
  • 1 medium zucchini
  • ½ cup corn kernels
  • ½ medium red bell pepper
  • ½ cup cooked squash puree

Instructions

    Dice the 1 medium zucchini and 1/2 red bell pepper into small pieces; place in a bowl with the 1/2 cup corn kernels.

    Cut the 1/2 lb fish or shrimp into bite-size pieces and toss with the 1/4 cup lime juice in a separate bowl. Let sit for 5 minutes until the seafood turns opaque.
