- ½ lb shrimp
- 1 medium onion
- 3 tbsp olive oil

Cut the 1 lb chicken breast into 1-inch cubes and peel the 0.5 lb shrimp. Slice the 1 medium onion into wedges. Thread chicken, shrimp, and onion onto skewers, alternating as you go.

In a small bowl, mix 2 tbsp olive oil, juice of 1 lemon, 1 tsp salt, and 2 minced garlic cloves. Brush this mixture over the skewers, coating all sides.

Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook for 4-5 minutes per side, until the chicken is cooked through and the shrimp are pink and opaque.

While the skewers cook, make the sauce: in a blender or food processor, combine 0.5 cup fresh herbs, remaining 1 tbsp olive oil, juice of 1 lemon, and a pinch of salt. Blend until smooth, adding a splash of water if needed.
