Ingredients
- 1 cup all-purpose flour
- ½ cup sattu (roasted chickpea flour)
- ½ medium yellow onion, finely diced
- 1 whole green chili, finely chopped
- ¾ cup water, divided
- 3 tbsp neutral cooking oil

Mix flour with 0.5 cup water and a pinch of salt until a soft dough forms. Knead for 1 minute.

Combine sattu, diced onion, chopped green chili, and 0.25 cup water in a bowl until it holds together as a filling.

Divide dough into 2 balls. Flatten one, add 2 tbsp sattu filling to the center, fold edges up and seal.

Roll gently into a 7-inch round without flattening the filling. Repeat with the second ball.

Heat 1.5 tbsp oil in a skillet over medium-high. Fry one paratha 2 minutes per side until golden and blistered.

Repeat with remaining 1.5 tbsp oil and second paratha. Serve hot with pickle or yogurt.
