Sambar with Idli
A quick and comforting South Indian breakfast of soft steamed idli cakes served with a warm, spiced lentil-vegetable sambar, a side of coconut chutney, and a squeeze of fresh lime.

Ingredients
- 4 pieces idli
- ½ cup toor dal
- 1 cup mixed vegetables
- 2 tbsp sambar powder
- ½ cup coconut chutney
- 1 whole lime

Pressure cook the 0.5 cup toor dal with 1.5 cups water until soft, about 15 minutes. Mash well and set aside.

In a pot, add the 1 cup mixed vegetables, 2 tbsp sambar powder, and 2 cups water. Bring to a boil and simmer until vegetables are tender, about 10 minutes.

Stir the mashed dal into the vegetable mixture. Add salt to taste and simmer for 5 minutes until the sambar thickens slightly and smells aromatic.

Steam the 4 idli pieces according to package instructions, about 10 minutes, until soft and fluffy.

Serve the hot sambar over the idli with the 0.5 cup coconut chutney and a squeeze of the 1 lime on the side.
