Ingredients

  • 8 oz salmon fillet (sushi-grade)
  • 1 large avocado
  • 1 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1 tsp sesame seeds
  • 2 tbsp fresh chives

Instructions

    Dice the 8 oz salmon into 1/4 inch cubes and place in a bowl. Add 1 tbsp soy sauce and 1 tbsp balsamic vinegar, toss gently, and let marinate while you prep the avocado.

    Halve and pit the 1 large avocado, scoop the flesh into a bowl, and mash with a fork until smooth but still slightly chunky. Season with a pinch of salt and pepper.

    Divide the mashed avocado between two plates, spreading it into an even layer. Spoon the marinated salmon over the avocado, leaving a small border.

    Sprinkle with 1 tsp sesame seeds and 2 tbsp chopped chives. Drizzle any remaining marinade from the bowl over the top and serve immediately.
