Ingredients

  • 2 fillets (about 6 oz each) salmon fillets
  • 8 oz soba noodles
  • 8 oz mixed mushrooms
  • 3 tbsp low-sodium soy sauce
  • 4 cups vegetable broth
  • ½ cup fresh cilantro
  • 1 tbsp vegetable oil

Instructions

    Cook the 8 oz soba noodles according to package directions until just tender, about 5 minutes. Drain, rinse with cold water, and set aside.

    Heat 1 tbsp vegetable oil in a large pot over medium-high heat. Add the 8 oz mushrooms and cook, stirring occasionally, until golden and softened, about 6 minutes.

    Pour in 4 cups vegetable broth and 3 tbsp soy sauce. Bring to a boil, then reduce heat to low and simmer for 5 minutes to blend flavors.

    Add the 2 salmon fillets to the broth, skin-side down. Cover and poach gently until the salmon is opaque and flakes easily, about 8 minutes.

    Divide the noodles among 4 bowls. Ladle the hot broth and mushrooms over the noodles, then top each bowl with a piece of salmon.
