Ingredients

  • 3 cups rye flour
  • 1.5 cups water
  • 2.25 teaspoons active dry yeast
  • 1.5 teaspoons salt
  • 1 tablespoon honey

Instructions

    In a large bowl, combine 1.5 cups warm water (about 110°F) with 1 tbsp honey and 2.25 tsp yeast. Let sit until foamy, about 5-10 minutes.

    Add 3 cups rye flour and 1.5 tsp salt to the yeast mixture. Stir until a shaggy dough forms; it will be sticky.

    Turn dough onto a floured surface and knead for 5-7 minutes, adding flour as needed, until smooth and elastic.

    Place dough in a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour.

    Punch down dough, shape into a round loaf, and place on a baking sheet. Cover and let rise for 30 minutes.

    Preheat oven to 375°F. Score the top of the loaf with a sharp knife.
