Ingredients

- 1.5 cups water
- 2.25 teaspoons active dry yeast
- 1.5 teaspoons salt
- 1 tablespoon honey

In a large bowl, combine 1.5 cups warm water (about 110°F) with 1 tbsp honey and 2.25 tsp yeast. Let sit until foamy, about 5-10 minutes.

Add 3 cups rye flour and 1.5 tsp salt to the yeast mixture. Stir until a shaggy dough forms; it will be sticky.

Turn dough onto a floured surface and knead for 5-7 minutes, adding flour as needed, until smooth and elastic.

Place dough in a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour.
