Ingredients
- 4 6 oz each salmon fillets
- 2 cups cherry tomatoes
- 2 sprigs fresh rosemary
- 3 tbsp olive oil
- 1 whole lemon
- 2 cloves garlic
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 400°F. Line a baking sheet with parchment paper.

In a small bowl, mix 3 tbsp olive oil, zest and juice of 1 lemon, 2 minced garlic cloves, 1 tsp salt, and 0.5 tsp black pepper.

Place 4 salmon fillets on the prepared sheet. Pour half the oil mixture over the salmon, rubbing to coat.

Scatter 2 cups cherry tomatoes around the salmon. Tuck 2 rosemary sprigs among the tomatoes.

Roast for 12-15 minutes, until salmon flakes easily with a fork and tomatoes are blistered.
