Ingredients
- 1 lb lamb, cut into 1-inch cubes (or pre-cut)
- 3 tbsp tomato paste
- 1 medium, sliced red onion
- 1.5 tbsp ginger-garlic paste
- 1 tsp garam masala
- ½ tsp red chili powder

Heat oil in a heavy skillet over medium-high until shimmering, ~90 seconds.

Add lamb cubes and sear 3-4 minutes per side until golden brown without stirring constantly.

Push lamb to the side, add sliced onion and ginger-garlic paste, cook until fragrant, ~60 seconds.

Stir in tomato paste, garam masala, and chili powder, then add 1 cup water and a pinch of salt.

Simmer for 10 minutes until lamb is tender and gravy thickens slightly, stirring occasionally.
