Ingredients

  • 1.5 lbs fresh or frozen mixed red berries (raspberries, redcurrants, strawberries)
  • ⅓ cup sugar
  • ½ cup water
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 cup cold heavy cream

Instructions

    Combine berries, sugar, and water in a medium saucepan over medium heat.

    Stir occasionally until the berries release their juices and sugar dissolves, ~8 minutes.

    Whisk cornstarch with 1 tbsp cold water until smooth; pour into the saucepan.

    Stir constantly until the mixture thickens and looks glossy, ~2 minutes.

    Remove from heat and stir in lemon juice. Pour into a bowl and chill for 5 minutes.

    In a separate bowl, whip cold cream with a whisk until soft peaks form, ~3 minutes.

    Divide the chilled compote among serving bowls. Top each with a dollop of whipped cream.
