Ingredients
- 2 lb goat meat (bone-in chunks)
- 1 leaf banana leaf (for serving)
- 1 green chili pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 tomato (sliced)
- 1 onion (sliced)
- ½ cup grated cheese (e.g., queso fresco or mozzarella)
- 2 tbsp olive oil
Instructions
- 1
Preheat oven to 375°F. Pat the 2 lb goat meat dry and season generously with salt and pepper on all sides.
- 2
Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high. Sear the goat until browned on all sides, about 8 minutes total.
- 3
Transfer skillet to oven and roast until meat is tender and pulls apart easily, about 30 minutes. If not tender, cover with foil and roast 10 more minutes.
- 4
While meat roasts, arrange the banana leaf on a serving platter. Scatter the sliced onion, tomato, yellow bell pepper, and green chili over the leaf.
- 5
When goat is done, let rest 5 minutes, then place on top of the vegetables. Sprinkle with 1/2 cup grated cheese and serve warm.
- 6
Optional: add a squeeze of lime or a pinch of cumin before serving if you have them.
