Ingredients
- 8 cloves garlic cloves, unpeeled
- 1 can canned chickpeas (15-ounce can), drained and rinsed
- 3 tablespoons tahini (sesame seed paste)
- 3 tablespoons lemon juice, fresh
- 3 tablespoons olive oil

Remove the roasted garlic from the oven and let it cool for 2 minutes until you can handle it comfortably.

Squeeze each cooled garlic clove from its skin into a small bowl; the creamy roasted flesh will slide out easily, leaving the papery skin behind.

Pour the drained chickpeas, roasted garlic, 3 tablespoons of tahini, 3 tablespoons of lemon juice, 2 tablespoons of olive oil, and 0.5 teaspoon of salt into a food processor.

Pulse the processor 5–6 times, then run it continuously for 2–3 minutes until the mixture transforms into a smooth, creamy paste with no visible chickpea chunks.

Taste the hummus and add more salt or lemon juice by the pinch if needed, blending for 10 seconds after each addition.

Transfer the hummus to a serving bowl and use the back of a spoon to create a shallow well in the center.
