- 1.5 lb potatoes
- 3 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1 tsp salt

Preheat oven to 425°F. Cut 1.5 lb potatoes into 1-inch chunks and place on a large baking sheet. Drizzle with 2 tbsp olive oil, sprinkle with 1/2 tsp salt, and toss to coat.

Season 1.5 lb turkey breast with 1 tbsp olive oil, 1 tsp dried thyme, 1 tsp garlic powder, and remaining 1/2 tsp salt. Rub all over.

Place turkey on top of potatoes. Roast for 25-30 minutes, until turkey reaches 165°F and potatoes are golden and tender when pierced with a fork.
