Ingredients
- 5 kg whole turkey
- 3 tbsp olive oil
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp paprika
- 1 tbsp salt
- 1 tsp black pepper

Preheat oven to 350°F (175°C). Pat the 5kg turkey dry with paper towels, inside and out.

In a small bowl, mix 3 tbsp olive oil, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tsp paprika, 1 tbsp salt, and 1 tsp black pepper.

Rub the seasoning mixture all over the turkey, including under the skin and inside the cavity.

Place the turkey breast-side up on a rack in a roasting pan. Roast for about 3 hours, until the skin is golden and crispy and a meat thermometer reads 165°F (74°C) in the thickest part of the thigh.

Remove from oven and let rest for 20 minutes before carving. The juices will redistribute, keeping the meat moist.
