Ingredients

  • 2 whole duck breast
  • 1 whole orange
  • 1 whole lemon
  • 2 tbsp fresh herbs (thyme or parsley)
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Score the duck breast skin in a crosshatch pattern, then season both sides with the 1 tsp salt and 0.5 tsp black pepper.

    Place the duck breast skin-side down in a cold skillet. Turn heat to medium and cook until the skin is golden and crispy, about 8 minutes. Pour off excess fat as needed.

    Flip the duck and cook for another 4-5 minutes until the internal temperature reaches 135°F for medium-rare. Remove from pan and let rest for 5 minutes.

    While the duck rests, slice the 1 orange and 1 lemon into thin rounds. Arrange the citrus slices on a plate and sprinkle with the 2 tbsp fresh herbs.

    Slice the rested duck breast thinly and arrange over the citrus garnish. Serve immediately.
