- 4 sprigs fresh thyme

Preheat oven to 400°F. Pat the 1.5 lb beef sirloin roast dry and season all over with 1 tsp salt and 0.5 tsp black pepper.

Heat 2 tbsp olive oil in an oven-safe skillet over medium-high. Sear the beef until browned on all sides, about 3 minutes per side.

Transfer the skillet to the oven and roast until internal temperature reaches 135°F for medium-rare, about 20-25 minutes. Remove beef, rest on a cutting board for 10 minutes.

While beef rests, cut 2 large russet potatoes into fries. Toss with 1 tbsp olive oil and a pinch of salt. Spread on a baking sheet and bake at 400°F until golden and crispy, about 25 minutes, flipping halfway.

Place the skillet over medium heat. Whisk in 2 tbsp flour, scraping up browned bits, cook for 1 minute. Slowly whisk in 1.5 cups beef broth and add 4 sprigs thyme. Simmer until thickened, about 5 minutes.
