Ingredients

  • 2 cups ricotta cheese
  • 2 cups mixed berries (fresh or frozen)
  • 3 tbsp honey
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

    In a small bowl, stir together the 2 cups ricotta, 1 tbsp honey, and 1 tsp vanilla extract until smooth. Set aside.

    In a saucepan over medium heat, combine the 2 cups berries, remaining 2 tbsp honey, and 1 tbsp lemon juice. Cook, stirring occasionally, until berries release their juices and the sauce thickens slightly, about 8-10 minutes.

    Remove the berry sauce from heat and let it cool for 5 minutes; it will continue to thicken as it cools.

    Divide the ricotta mixture among 4 serving bowls or glasses.
