Ricotta Pasta with Herbs

Ingredients
- 8 oz pasta
- 1 cup ricotta cheese
- 1 cup cherry tomatoes
- ¼ cup fresh basil
- 2 tbsp olive oil
- 1 tsp salt

Bring a large pot of salted water to a boil. Add the 8 oz pasta and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, halve the 1 cup cherry tomatoes and chop the 1/4 cup fresh basil. In a large bowl, combine the 1 cup ricotta, 2 tbsp olive oil, and 1/2 tsp salt.

Add the hot pasta and tomatoes to the ricotta mixture. Toss well, adding reserved pasta water a splash at a time until the sauce coats the pasta creamy, about 2-3 minutes.

Stir in the chopped basil and season with extra salt to taste. Serve immediately, topped with extra basil or a drizzle of olive oil if desired.
