Ranchero Eggs

Fried eggs with a spicy kick, topped with roasted nuts and a dusting of chili powder. A quick and satisfying breakfast or snack.

Ingredients

  • 2 large eggs
  • ½ teaspoon chili powder
  • 2 tablespoons mixed nuts
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

    Heat 1 tbsp olive oil in a nonstick skillet over medium heat. Add 2 tbsp mixed nuts and toast, stirring, until fragrant and lightly browned, about 2-3 minutes. Remove nuts and set aside.

    In the same skillet, crack 2 eggs directly into the pan. Season with 1/4 tsp salt and 1/4 tsp black pepper. Cook until whites are set and edges are crispy, about 3-4 minutes for sunny-side up.

    Sprinkle 1/2 tsp chili powder over the eggs and top with the toasted nuts. Serve immediately, with extra chili powder on the side if desired.
