Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp butter, melted
  • 1.5 lbs quark or ricotta cheese
  • 3 whole eggs
  • ½ cup granulated sugar
  • 1 tsp lemon zest

Instructions

    Preheat oven to 400°F. Mix graham cracker crumbs with melted butter until the mixture looks like wet sand.

    Press crumb mixture into a 10-inch cast iron skillet or round baking dish, covering the bottom evenly.

    In a bowl, whisk quark, eggs, sugar, and lemon zest until smooth and no lumps remain, about 2 minutes.

    Pour quark mixture over the crust, spreading evenly to the edges.

    Bake for 12–14 minutes until the top is pale golden and the center jiggles slightly when shaken.
