Ingredients
- 2 cups whole wheat flour
- ½ teaspoon salt
- ¾ cup water
- 2 tablespoons oil
- 2 cups oil for frying

In a large bowl, mix 2 cups whole wheat flour and 1/2 tsp salt. Add 2 tbsp oil and rub into the flour until crumbly.

Gradually add 3/4 cup water, mixing until a stiff dough forms. Knead for 5 minutes until smooth, then cover and rest for 15 minutes.

Divide dough into 12 equal balls. Roll each ball into a 4-inch circle, about 1/8 inch thick, on a lightly floured surface.

Heat 2 cups oil in a deep pan over medium-high until a small dough piece sizzles immediately, about 350°F.

Slide one puri into the hot oil. It should puff up within seconds; press gently with a slotted spoon to help it puff fully.

Fry until golden brown on both sides, about 1 minute per side. Remove and drain on paper towels. Repeat with remaining puris.

Serve hot with curry or chutney. Store leftovers in an airtight container for up to 2 days.
