- 2.5 cups all-purpose flour
- 1 teaspoon instant yeast
- 1 teaspoon salt
- 1 cup warm water
- ¼ cup baking soda
- 1 tablespoon coarse salt

In a large bowl, mix 2.5 cups flour, 1 tsp instant yeast, and 1 tsp salt. Add 1 cup warm water and stir until a shaggy dough forms.

Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 30 minutes until doubled.

Punch down the dough and divide into 4 equal pieces. Shape each into a smooth ball and place on a parchment-lined baking sheet.

In a large pot, bring 6 cups water to a boil. Carefully add 1/4 cup baking soda (it will foam). Boil each roll for 30 seconds per side, then return to the sheet.

Brush the rolls with beaten egg (optional) and sprinkle with 1 tbsp coarse salt. Use a sharp knife to score an X on top of each roll.
