- 1 medium red onion
- 4 cups mixed salad greens
- 1 large tomato
- ½ cup pickled cucumbers
- 3 tbsp olive oil

Boil the 1.5 lb potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool slightly, then slice into rounds.

While potatoes cook, thinly slice the 1 red onion and cut the 1 tomato into wedges. Toss the 4 cups mixed greens with the onion and tomato in a large bowl.
