Ingredients

  • 4 medium potatoes
  • 1 small onion
  • 1 large egg
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 4 tbsp vegetable oil
  • 1 cup plain yogurt
  • 1 cup fresh herbs (parsley, chives, dill)

    Grate 4 medium potatoes and 1 small onion into a bowl. Squeeze out excess liquid with your hands, then discard the liquid.

    Stir in 1 egg, 2 tbsp flour, and 1/2 tsp salt until just combined. The batter should be lumpy, not smooth.

    Heat 2 tbsp oil in a large skillet over medium-high. Drop 1/4 cup batter per pancake, flattening slightly. Cook until golden and crisp, about 3 minutes per side. Repeat with remaining batter, adding more oil if needed.

    While pancakes cook, cut 2 of the remaining potatoes into 1/2-inch cubes. Heat 2 tbsp oil in another skillet over medium-high. Add potatoes and 1/2 tsp salt. Cook, stirring occasionally, until golden and tender, about 10 minutes.

    In a small bowl, mix 1 cup yogurt with 1 cup finely chopped fresh herbs (parsley, chives, dill) and a pinch of salt. Stir until well combined.

    Serve the pancakes topped with fried potatoes and a generous dollop of green sauce. Add a pat of butter on top if you like.
