Ingredients
- 2 tbsp butter
- 4 medium leeks, white and light green parts, sliced into 1/2-inch rounds
- 1.5 lbs potatoes, peeled and cut into 1/2-inch cubes
- 4 cups chicken or vegetable broth
- ½ cup heavy cream
- 1 pinch salt and black pepper to taste

Melt butter in a large pot over medium heat until foaming, about 1 minute.

Add leeks and stir. Cook until softened and translucent, 5–6 minutes.

Add potatoes and broth. Bring to a boil, then reduce heat and simmer 10 minutes.

Potatoes should be fork-tender. Stir in cream and season with salt and pepper.
