Ingredients
- 2 large potatoes
- 1 medium onion
- ½ cup all-purpose flour
- 1 teaspoon chili powder
- ¼ cup fresh cilantro
- ½ cup vegetable oil

Peel and grate the 2 large potatoes and 1 medium onion. Squeeze out excess liquid, then mix with 1/2 cup flour, 1 tsp chili powder, and salt. Stir in 2 tbsp chopped cilantro.

Heat 1/4 cup oil in a large skillet over medium-high. Drop spoonfuls of the potato mixture, flattening slightly. Cook until golden and crisp, about 3-4 minutes per side.

Remove fritters and drain on paper towels. In the same skillet, add remaining 1/4 cup oil and the sliced onion. Cook until soft and lightly browned, about 5 minutes.
