Ingredients

  • 2 lb pork roast
  • 1.5 lb potatoes
  • 1 head broccoli
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Preheat oven to 425°F. Pat the 2 lb pork roast dry with paper towels, then rub with 1 tsp salt, 0.5 tsp black pepper, and 1 tsp paprika.

    Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high. Sear the pork roast until browned on all sides, about 3 minutes per side.

    Cut 1.5 lb potatoes into 1-inch chunks and add to the skillet with 1 tbsp olive oil and 3 minced garlic cloves. Toss to coat, then roast in the oven for 20 minutes.

    Cut 1 head of broccoli into florets and add to the skillet. Stir everything, then roast for another 15 minutes, until the pork reaches 145°F and potatoes are fork-tender.

    Remove the skillet from the oven and let the pork rest for 5 minutes before slicing. Serve the pork with the potatoes and broccoli.
