Ingredients

  • 1 pound pork tenderloin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • ½ cup dried apricots
  • ½ cup chicken broth
  • 2 ounces blue cheese
  • ¼ cup fresh basil leaves

Instructions

    Slice the 1 pound pork tenderloin into 1-inch thick medallions and season both sides with the 0.5 teaspoon salt and 0.25 teaspoon black pepper.

    Heat the 2 tablespoons olive oil in a large skillet over medium-high heat. Add the pork medallions in a single layer and cook until browned, about 3 minutes per side. Transfer to a plate.

    Reduce heat to medium. Add the 0.5 cup dried apricots and 0.5 cup chicken broth to the skillet, scraping up any browned bits. Simmer until the apricots soften and the sauce reduces slightly, about 3 minutes.

    Return the pork medallions to the skillet and spoon the sauce over them. Cook until the pork is cooked through but still juicy, about 2 minutes more.

    Crumble the 2 ounces blue cheese over the pork and sauce. Cover the skillet and let stand off heat until the cheese melts, about 1 minute.
