Ingredients

  • 1 lb pork loin or tenderloin, thinly sliced
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced

Instructions

    In a bowl, mix 3 tbsp soy sauce, 2 tbsp honey, and 2 minced garlic cloves. Add 1 lb thinly sliced pork and toss to coat; let marinate while you prep veggies.

    Heat a large skillet over medium-high heat. Add the pork with its marinade in a single layer; cook until browned and cooked through, about 5-7 minutes. Remove pork to a plate.

    In the same skillet, add 1 sliced red bell pepper and 1 sliced zucchini. Cook over medium-high, stirring, until tender-crisp, about 4-5 minutes.

    Return pork to the skillet with the vegetables. Stir everything together and cook for 1-2 minutes until hot and glazed. Serve with sliced green onions and lemon wedges if you like.
