Ingredients
- 2 packages ramen noodles
- 8 oz pork loin or shoulder, thinly sliced
- 4 cups baby spinach or bok choy
- 3 stalks green onions, sliced
- 2 large eggs
- 4 cups low-sodium chicken or vegetable broth

Bring a small pot of water to a boil, add the 2 eggs, and cook for 6-7 minutes for soft-boiled. Transfer to ice water, peel, and set aside.
