Ingredients

  • 1.5 lb pork shoulder or butt, cut into 1.5-inch chunks
  • ½ cup soy sauce
  • ¼ cup white vinegar
  • 1 tbsp black peppercorns
  • 4 count garlic cloves, minced
  • 1 cup water
  • 4 count eggs

Instructions

  1. 1

Heat a 12-inch skillet over medium-high. Add pork in a single layer and sear without moving for 3 minutes until edges turn golden.

  2. 2

Stir in garlic and toast for 30 seconds until fragrant, then add soy sauce, vinegar, peppercorns, and water.

  3. 3

Bring to a simmer, cover, and braise for 12 minutes until pork is fork-tender and sauce deepens in color.

  4. 4

Nestle eggs into the sauce and simmer uncovered for 4 minutes until egg whites just set but yolks stay soft.

  5. 5

Serve pork and eggs together in shallow bowls with sauce spooned over top.
