Ingredients

  • 1 lb white fish fillets (catfish or sea bass)
  • 3 tbsp granulated sugar
  • 4 tbsp soy sauce
  • 4 cloves garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 8 oz wing beans, cut into 2-inch lengths
  • 2 cups steamed white rice
  • 2 tbsp neutral cooking oil

Instructions

  1. 1

Heat oil in a heavy skillet over medium-high until it shimmers, about 90 seconds.

  2. 2

Stir sugar, garlic, and ginger together until fragrant, roughly 45 seconds.

  3. 3

Pour soy sauce into the pan and let the sauce bubble and darken, about 2 minutes.

  4. 4

Add fish fillets and wing beans, nestling them into the sauce. Cover and simmer 8 minutes.

  5. 5

Uncover and tilt the pan, spooning the glossy caramel sauce over the fish until edges look caramelized, 2 minutes.

  6. 6

Divide rice between two bowls, top with fish, beans, and all the sauce.
