Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup heavy cream
- ½ cup chicken broth
- 2 tablespoons poppy seeds
- 2 tablespoons butter
Instructions
- 1
Season the 4 chicken breasts with 1 teaspoon salt and 0.5 teaspoon black pepper on both sides.
- 2
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides, about 5 minutes per side. Remove to a plate.
- 3
Reduce heat to medium. Add 2 tablespoons butter to the skillet and let it melt, scraping up any browned bits.
- 4
Pour in 1 cup heavy cream and 0.5 cup chicken broth. Stir and bring to a simmer, cooking until slightly thickened, about 3 minutes.
- 5
Return the chicken to the skillet, spooning sauce over the top. Simmer until the chicken is cooked through and the sauce coats the back of a spoon, about 5 minutes.
- 6
Stir in 2 tablespoons poppy seeds and cook for 1 minute more. Serve hot with the creamy sauce spooned over the chicken.
