Ingredients

  • 2 large (about 1 lb) chicken breast, boneless skinless
  • 6 cloves, minced garlic
  • 1 juiced (about 0.33 cup) orange
  • 1 juiced (about 0.25 cup) lime
  • ¼ cup olive oil
  • 1 bag (about 16 oz) frozen french fries
  • 2 medium, sliced tomato
  • 2 cups, chopped romaine lettuce

Instructions

  1. 1

Preheat oven to 425°F. Spread fries on one side of a sheet pan, drizzle with oil, salt, and pepper. Bake for 12 minutes.

  2. 2

While fries bake, whisk orange juice, lime juice, minced garlic, and 2 tbsp olive oil in a bowl. Season with salt and pepper.

  3. 3

Pat chicken dry. Season with salt and pepper. Brush both sides with half the mojo marinade.

  4. 4

At 12 minutes, push fries to the edges of the pan. Lay chicken in the center and drizzle with remaining mojo.

  5. 5

Bake 10–12 minutes more until chicken reaches 165°F and fries are golden. Chicken should be opaque throughout.

  6. 6

Divide lettuce and tomato slices between two plates. Top with a chicken breast and a generous pile of fries. Drizzle pan juices over chicken.
