Ingredients

  • 1 lb pork shoulder, cut into 1-inch cubes
  • 8 oz kielbasa sausage, sliced into 1/2-inch rounds
  • 1.5 cups sauerkraut (drained)
  • 2 tbsp tomato paste
  • 1 cup beef or chicken broth
  • 1 medium yellow onion, diced

Instructions

    Heat oil in a large skillet or Dutch oven over medium-high. Brown pork cubes in two batches, ~3 min per batch, until edges look caramelized.

    Remove pork to a plate. Add diced onion to the same pan, scraping up browned bits, and cook until translucent, ~2 minutes.

    Stir in tomato paste and cook 1 minute until fragrant. Return pork to the pan with the kielbasa.

    Add sauerkraut and broth, bring to a simmer, then reduce heat to medium-low. Cover and cook 12 minutes, stirring once halfway.

    Uncover, taste, and adjust seasoning with salt and pepper. Serve hot in bowls.
