  • 4 pieces pita bread
  • 2 large russet potatoes
  • 1 cup greek yogurt
  • ½ medium cucumber
  • 2 cloves garlic
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp salt

    Preheat oven to 425°F. Cut 2 large potatoes into thin fries, toss with 2 tbsp olive oil and 1/2 tsp salt, spread on a baking sheet.

    Bake fries for 25-30 minutes, flipping halfway, until golden and crispy on the outside.

    While fries bake, grate 1/2 cucumber, squeeze out excess water, and mix with 1 cup Greek yogurt, 2 minced garlic cloves, 1 tbsp lemon juice, and 1/2 tsp salt.

    Warm 4 pita breads in the oven or a dry skillet for 2-3 minutes until soft and pliable.
