Ingredients

  • 1.5 lbs chicken thighs, boneless and skinless
  • ⅓ cup hot sauce (Frank's or similar peppery sauce)
  • 3 tbsp lemon juice
  • 4 cloves garlic, minced
  • 1 cup roasted red peppers (jarred)
  • 2 cups white rice (cooked)
  • 1 tsp chili powder or paprika

Instructions

    Pat chicken thighs dry. Season generously with salt and black pepper on both sides.

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 1 minute.

    Sear chicken 4 minutes per side without moving until edges are golden. Transfer to a plate.

    In the same skillet, stir garlic for 30 seconds until fragrant, then add hot sauce, lemon juice, and chili powder.

    Return chicken to skillet, add roasted peppers, and simmer 3 minutes until sauce coats the chicken.
