Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ¼ cup natural peanut butter
  • 1 whole lime (juiced)
  • 2 tbsp soy sauce
  • 1 tbsp sriracha or Thai chili sauce
  • 3 cups mixed stir-fry vegetables (bell pepper, snap peas, broccoli florets)

Instructions

    Cut chicken into 1-inch chunks. Heat 2 tbsp oil in a large skillet over medium-high heat.

    While oil heats, whisk peanut butter, lime juice, soy sauce, and sriracha with 3 tbsp water until smooth.

    Add chicken to the skillet and cook, stirring occasionally, until edges brown and no pink remains, ~7 minutes.

    Pour peanut sauce over chicken and toss to coat. Simmer 1 minute until glossy.

    Push chicken to the side of the skillet. Add vegetables to the empty side and stir-fry until tender-crisp, ~4 minutes.

    Toss vegetables with the chicken and sauce. Serve hot.
