Ingredients
- 1 lb boneless, skinless chicken breasts
- ¼ cup natural peanut butter
- 1 whole lime (juiced)
- 2 tbsp soy sauce
- 1 tbsp sriracha or Thai chili sauce
- 3 cups mixed stir-fry vegetables (bell pepper, snap peas, broccoli florets)

Cut chicken into 1-inch chunks. Heat 2 tbsp oil in a large skillet over medium-high heat.

While oil heats, whisk peanut butter, lime juice, soy sauce, and sriracha with 3 tbsp water until smooth.

Add chicken to the skillet and cook, stirring occasionally, until edges brown and no pink remains, ~7 minutes.
