Ingredients
- 12 oz penne pasta
- 1 lb shrimp, peeled and deveined
- ½ cup pesto
- 1 loaf garlic bread
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
Instructions
- 1
Bring a large pot of salted water to a boil. Add the 12 oz penne and cook until al dente, about 11 minutes. Reserve 1 cup of pasta water, then drain.
- 2
While the pasta cooks, heat the 2 tbsp olive oil in a large skillet over medium-high heat. Add the 1 lb shrimp in a single layer and season with the 1 tsp salt and 0.5 tsp black pepper. Cook until pink and opaque, about 2-3 minutes per side. Remove shrimp to a plate.
- 3
In the same skillet, reduce heat to low. Add the 0.5 cup pesto and 0.25 cup of the reserved pasta water, stirring to combine and warm through, about 1 minute.
- 4
Add the cooked penne and shrimp back to the skillet. Toss everything together, adding more pasta water if needed to coat the pasta evenly. Cook for 1-2 minutes until heated through.
- 5
Meanwhile, toast the 1 loaf garlic bread according to package directions, usually 5-7 minutes in a 400°F oven until golden and crispy.
- 6
Serve the pesto pasta immediately with the garlic bread on the side. Enjoy!
