Ingredients
- 8 oz penne pasta
- 4 oz pepperoni
- ½ cup walnuts
- 3 tbsp olive oil
- ¼ cup parsley
- 1 tsp salt

Bring a large pot of salted water to a boil and cook the 8 oz penne until al dente, about 11 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, heat 1 tbsp olive oil in a large skillet over medium. Add the 4 oz sliced pepperoni and cook until crisp, about 4 minutes. Remove with a slotted spoon.

In the same skillet, add the 0.5 cup walnuts and toast over medium, stirring, until fragrant and lightly browned, about 3 minutes. Add the remaining 2 tbsp olive oil and the cooked penne.

Toss everything together, adding a splash of reserved pasta water to create a light sauce that coats the pasta. Season with the 1 tsp salt (or to taste).
