Ingredients

  • 8 corn tortillas
  • 1 lb pork tenderloin
  • 2 cups pineapple chunks
  • 1 red bell pepper
  • 4 green onions
  • ½ cup cilantro

Instructions

    Slice the 1 lb pork tenderloin into thin strips. Toss with 1 tbsp oil, 1 tsp salt, and 1 tsp chili powder if you have it.

    Heat a large skillet over high heat. Add the pork and 1 sliced red bell pepper; cook until pork is browned and cooked through, about 6-8 minutes.

    Add 2 cups pineapple chunks and 4 chopped green onions to the skillet; cook 2-3 minutes until pineapple is charred and onions are soft.

    Warm 8 corn tortillas in a dry skillet or microwave. Fill with the pork mixture and top with 0.5 cup chopped cilantro.
