- 8 corn tortillas
- 1 lb pork tenderloin
- 2 cups pineapple chunks
- 1 red bell pepper
- 4 green onions
- ½ cup cilantro

Slice the 1 lb pork tenderloin into thin strips. Toss with 1 tbsp oil, 1 tsp salt, and 1 tsp chili powder if you have it.

Heat a large skillet over high heat. Add the pork and 1 sliced red bell pepper; cook until pork is browned and cooked through, about 6-8 minutes.

Add 2 cups pineapple chunks and 4 chopped green onions to the skillet; cook 2-3 minutes until pineapple is charred and onions are soft.
