Pappardelle with Meat Sauce

Ingredients
- 8 oz pappardelle pasta
- 1 lb ground beef
- 2 cups tomato sauce
- 1 medium onion
- ½ cup Parmesan cheese
- 1 sprig fresh rosemary

Bring a large pot of salted water to a boil. Add the 8 oz pappardelle and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, heat 1 tbsp olive oil in a large skillet over medium heat. Add the 1 diced onion and cook until soft and translucent, about 5 minutes.

Add the 1 lb ground beef to the skillet. Cook, breaking it up, until browned and no longer pink, about 6-8 minutes. Season with salt and pepper.

Stir in the 2 cups tomato sauce and 1 sprig rosemary. Simmer for 5 minutes until slightly thickened. Remove the rosemary sprig.

Add the cooked pasta to the skillet with the sauce. Toss to coat, adding a splash of reserved pasta water if needed. Serve topped with the 1/2 cup grated Parmesan.
