Ingredients

  • 1 cup urad dal flour
  • ½ cup water
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp cumin seeds
  • 2 tbsp vegetable oil

    In a bowl, mix 1 cup urad dal flour, 0.5 tsp salt, 0.25 tsp black pepper, and 0.5 tsp cumin seeds. Gradually add 0.5 cup water and knead into a stiff dough, about 3 minutes.

    Divide the dough into 8 equal balls. Keep them covered with a damp cloth to prevent drying.

    Roll each ball into a thin circle, about 6 inches wide, on a lightly floured surface. Keep them separate.

    Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Test with a tiny piece of dough—it should sizzle immediately.

    Fry one papadum at a time for 30-45 seconds per side, until golden and blistered. Drain on paper towels.

    Repeat with remaining papadums. Serve warm or at room temperature, with chutney or as a side.
